Watermelon just screams summer. Hibernating during the winter, the benefit-rich watermelon makes its triumphant return at barbecues and outdoor potlucks all summer long. And while slices of fresh watermelon are delicious, there’s more than one way to enjoy it — lucky for us!

One of my go-to warm weather recipes is this Mint Watermelon Salad. It’s fresh, fruity and perfect for enjoying on those hot nights. It also takes almost no time at all to prepare! Ready to get your salad on?

Start by removing the rind from the watermelon and cutting the fruit into large pieces. Since the watermelon is the real star of this recipe, opt for the best melon you can find. Add the fruit to a large bowl.

Next, mix the balsamic vinegar, raw honey and freshly chopped mint in a small bowl. Whisk until all the ingredients are blended and smooth. Pour the dressing over the watermelon pieces and refrigerate for at least 30 minutes. This time marinating is going to infuse the watermelon with a sweet, minty taste that you can only get from all-natural fruits and ingredients.And that’s all there is to this mint watermelon salad. It’s so easy to make, you’ll be eating this all summer long. Don’t let it fool you, either. Though it has “salad” in the name, trust me, it can pass as a dessert!

Ingredients:

  • 3 cups watermelon
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons raw honey
  • 1 teaspoon chopped mint

Directions:

  1. Take watermelon off rind and cut into large pieces. Place the pieces in a large bowl.
  2. Combine vinegar, honey and chopped mint in small bowl. Whisk until blended.
  3. Pour over watermelon pieces and refrigerate for 15–20 minutes.
