Grecian spinach recipe - Dr. Axe

Ingredients:

  • 1 tablespoon coconut oil
  • ½ - 1 cup sliced red onion
  • 6-8 cups baby spinach
  • ½ teaspoon grated lemon peel
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ cup crumbled feta cheese

Directions:

  1. Heat oil over medium high heat.
  2. Add in sliced red onion and cook until translucent, about 5-7 minutes.
  3. Add spinach and saute for 2-3 minutes.
  4. Add lemon peel, salt and pepper. Saute about 1 minute.
  5. Serve and top with feta.

    Have a confusion regarding spinach. Years ago, I heard eating raw spinach leached the calcium from your bones, that it is not helpful for thyroid conditions and it blocks iron (I think). My mother use to set a pot of boiling water on the stove and add the raw spinach. Then take it out after it wilted (wouldn’t this kill of the nutrients). Help, what is the true data so I can think with it.
