  • 4 cups zucchini noodles or gluten-free noodles

  1. Preheat oven to 375 degrees F.
  2. In an oven-safe pan over medium heat, warm avocado oil.
  3. Meanwhile, place the eggs, cassava flour and crackers in three separate bowls large enough to dredge the chicken.
  4. Add the grated pecorino, paprika, garlic powder, oregano, thyme, salt and pepper to the crackers . Mix until well-combined.
  5. Dredge the chicken breasts one-by-one on all sides. In this order: cassava, eggs, cheese mixture.
  6. With tongs, place dredged chicken breasts into heated oil in the pan.
  7. Sauté each side until chicken is golden brown but not fully cooked. Remove from heat.
  8. To the pan, add tomato sauce so the chicken breasts are completely surrounded.
