- 1/2 tablespoon coconut oil
- 2 free-range chicken breasts, cubed
- 15 ounces full-fat coconut milk
- 4 cups chopped broccoli
- 1 cup water chestnuts
- 1 white onion, chopped
- 2 tablespoons curry
- 4 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
Instructions
- In a large skillet, add some coconut oil and sauté the onions for a few minutes.
- Add the spices and sauté for two more minutes.
- Add the coconut milk, chicken, broccoli and water chestnuts. Stir well. Cover and cook on medium for 15 minutes. Stir occasionally.
- Remove from heat and serve over rice and/or with naan bread.
