Makes about 2 cups


  • 1/2 cup (1 stick) butter
  • 1 onion, chopped
  • 1/4 cup Paleo flour blend
  • 2 cups stock, any flavor
  • 1/2 teaspoon herbes de Provence
  • sea salt and pepper


  1. Melt butter in a saucepan over medium heat. Add onions and cook until soft. Season with salt and pepper.
  2. Add flour and cook, stirring, 1 minute. Add stock and herbes de Provence, bring to a simmer, and cook until gravy is thickened, 4–5 minutes.

Raise your hand if you’ve made a dish for the sole purpose of smothering it in gravy. I’d guess most of us are guilty; after all, what goes better atop a grass-fed steak or Mashed Faux-Tatoes?

But if you’ve been buying gravy from a jar or using a long, complicated recipe, have I got a treat for you. This homemade gravy recipe uses just a handful of ingredients and comes together in minutes on the stove. Ready to make a delicious gravy? Read on.

Begin by melting butter (the benefits of butter far outweigh inferior canola oil) in a saucepan, then add your chopped nutritious onions. Stir the mix up until the onions begin softening, then season with salt and pepper.

Gravy recipe step 2 - Dr. Axe

Next, add flour to the saucepan and stir briskly for one minute. Next, add in your preferred stock and herbes de Provence. If you don’t have a bottle of the herbs handy, you can also make your own herbs de Provence. Bring all the ingredients to a simmer and keep cooking until the gravy has thickened, stirring occasionally.

How easy was that? If you’re crafty in the kitchen, this is a great base recipe to use. And if you just want a simple gravy that’s vegetarian-friendly and delicious, this is it, too. Gravy also freezes well, so you can make several batches of this and keep some on hand in the freezer for busy nights.
