Description
We’re all on a mission: Finding the best chocolate chip cookie on the planet. In our humble, opinion, this one is it because it’s chewy (a must!) and loaded with healthy ingredients yet still deliver that classic chocolate chip cookie punch. Enjoy!

- ¼ cup coconut oil, melted
- ⅓ cup coconut sugar
- 1 egg
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- ½ teaspoon sea salt
- 1 teaspoon baking powder
- 1 tablespoon arrowroot starch
- ½ cup + 1 tablespoon Paleo flour blend
- ½ cup dark chocolate chips (70% or darker)
Instructions
- Preheat oven to 350 F.
- In a medium bowl, whisk together the wet ingredients: coconut oil, coconut sugar, egg, almond butter and vanilla extract. Set aside.
- In a small bowl, add in the remaining dry ingredients, except the chocolate chips, and mix until well-combined.
- Add the dry ingredients to the wet ingredients, mixing until well-incorporated, then fold in the chocolate chips.
- Cover dough and let chill in the fridge for about 10 minutes to make it easier to work with. (Optional)
- Scoop out about 2 tablespoons of dough and form into a cookie shape. Place each cookie on a 9×11 baking sheet, spaced 1–2 inches a part.
- Bake for 10–11 minutes.
- Remove from oven and place on cooling rack. Let cool for at least 20 minutes before diving in.
