Description
One of the most surprisingly easy yet uniquely tasty meals are stuffed peppers. This ground turkey-stuffed bell pepper recipe is also just a very healthy meal, with 33 grams of carbs, 30 grams of protein alongside 19 grams of fat.

- ½ cup sprouted brown rice
- 4 large bell peppers of your choice, stem and seeds removed, sliced in half lengthwise
- 1 tablespoon avocado oil
- 1 pound ground turkey
- 2–3 garlic cloves minced
- ¼ red onion, minced
- ¼ cup parsley, chopped
- ½ teaspoon sea salt
- ½ teaspoon pepper
- 1 cup marinara sauce
- 2 ounces shredded goat cheddar cheese
Instructions
- Cook the brown rice according to the instructions.
- Preheat the oven to 375 F.
- In a large skillet over medium heat, add the avocado oil.
- Add in the turkey and cook halfway, where it’s still pink, about 3 minutes.
- Add in the garlic, onion, parsley, salt and pepper.
- Stir and cook until the turkey is done, about 3–5 minutes.
- Remove from heat and add marinara sauce and rice
- In a 8 x 8 baking dish greased or lined with parchment paper, add the bell peppers and fill them with the turkey mixture.
- Sprinkle with goat cheese and bake for 45 minutes.
