Apple Cinnamon Muffins Recipe

Description

These apple muffins are much healthier than anything you’d find in stores. They’re made with Paleo, gluten-free flour, natural coconut sugar, eggs and coconut oil. They’re yummy enough for dessert, but good as a mid-afternoon snack or quick breakfast on the go, too.


Ingredients

  • 2 cups Paleo flour (or use store-bought version)
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 apple, peeled, cored and finely chopped
  • 1 cup unsweetened applesauce
  • 2 tablespoons coconut oil
  • ¼ cup maple syrup
  • 3 eggs, beaten
  • 2 teaspoons cinnamon

Instructions

  1. Preheat oven to 300 degrees F and fill cupcake pan with liners.
  2. Mix flour, baking soda, salt and apples in a bowl.
  3. Melt coconut oil over low heat in a small pan on the stove.
  4. In a separate bowl, mix coconut oil, maple syrup, eggs and cinnamon with a beater. (Or use a stand-up mixer.)
  5. Combine both bowls and mix until just combined.
  6. Fill cupcake liners nearly full and bake for 30 minutes.
  7. Let the muffins cool for a few minutes before removing from the pan. Let them cool on a cooling rack.
