Description

Hummus is one of the most popular dips out there. If you’re looking to make your own healthy version with a twist, try my beet hummus recipe.


Ingredients

Scale
  • 2 large beets, washed and sliced
  • one 15-ounce can chickpeas, drained and rinsed
  • 2.5 tablespoons tahini
  • 2 cloves garlic, smashed
  • juice of 1 lemon
  • sea salt and pepper to taste

Instructions

  1. Preheat oven to 400 F.
  2. Place the beets on a baking sheet lined with parchment paper.
  3. Roast for 30 minutes or until fork tender.
  4. Add all ingredients to a food processor, and blend on high until well-combined.
  5. Serve with freshly chopped veggies.
