Fresh lemon and blueberries pair with creamy chia seeds in this protein-packed pudding. It’s a simple make-ahead recipe with a satisfying, decadent texture that’s hard to believe comes from such a nutrient-dense combination of ingredients.

- 4 tablespoons chia seeds
- 1 cup frozen blueberries
- Greek yogurt, optional
- ½ lemon, juiced (about 2 tablespoons)
- Lemon zest from 1 lemon (about 1 tablespoon)
- 1 tablespoon maple syrup
- 1 scoop vanilla whey protein or vanilla bone broth protein powder
- 1 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- Fresh blueberries, optional
Instructions
- Add the frozen blueberries, almond milk and protein powder to a high-speed blender, and blend on high until smooth.
- Pour the berry mixture into a medium-sized bowl, and whisk in the chia seeds, lemon zest, lemon juice, maple syrup and vanilla extract until well combined. Allow the mixture to sit for five minutes, and then stir it again.
- Cover and refrigerate for at least two hours or overnight. Stir once more before serving. If desired, top with Greek yogurt or coconut yogurt and fresh blueberries.
