Description
This cowboy caviar or cowboy salsa is full of some pretty tasty ingredients, like black beans, black-eyed peas, avocado and seasonings. It’s a nice filling changeup from salsa and guacamole.

- 15 ounces black beans, drained and rinsed
- 15 ounces black-eyed peas, drained and rinsed
- 2 Roma tomato, diced
- 1 red bell pepper, diced
- 1 red onion, diced
- 1 cup cilantro leaves, chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple sugar
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon chili powder
- ¼ teaspoon ground black pepper
- ¼ cup extra virgin olive oil or avocado oil
- ½ avocado, diced
Instructions
- Mix all ingredients together in a large bowl and refrigerate 30 minutes prior to serving.
- Serve with your favorite tortilla chips or atop your favorite tacos.
