Description

This cowboy caviar or cowboy salsa is full of some pretty tasty ingredients, like black beans, black-eyed peas, avocado and seasonings. It’s a nice filling changeup from salsa and guacamole.


Ingredients

Scale
  • 15 ounces black beans, drained and rinsed
  • 15 ounces black-eyed peas, drained and rinsed
  • 2 Roma tomato, diced
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 1 cup cilantro leaves, chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon chili powder
  • ¼ teaspoon ground black pepper
  • ¼ cup extra virgin olive oil or avocado oil
  • ½ avocado, diced

Instructions

  1. Mix all ingredients together in a large bowl and refrigerate 30 minutes prior to serving.
  2. Serve with your favorite tortilla chips or atop your favorite tacos.
