Description

We love scones in my house, and this healthy chocolate chip scones recipe is always a favorite. This one is straightforward and easy to make.

Ingredients

Scale
  • 2 cups gluten-free flour
  • ½ cup coconut sugar
  • 2½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 8 tablespoons cold butter
  • ½ cup kefir
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line baking sheet with parchment paper.
  2. In a bowl, mix flour, coconut sugar, baking powder, cinnamon and salt.
  3. Grate the butter and toss into flour mixture until mixture is coarse and the butter is the size of peas.
  4. In a separate bowl, mix kefir, egg and vanilla. Pour slowly over flour mixture and toss the mixture together until everything is just moistened.
  5. Fold in chocolate chips, being careful not to overwork the dough.
  6. Press into a disc shape and cut into equal wedges. Place on baking sheet and bake for 20–25 minutes until cooked through and golden.
