- 1 tablespoon coconut oil
- 3 eggs
- ¼ onion, chopped
- ½ bell pepper, chopped
- 1 teaspoon chili powder
- ¼ teaspoon black pepper
- ½ cup black beans
- ¼ cup guacamole
- ¼ cup salsa
Instructions
- In a bowl, beat the eggs, then stir in onion, bell pepper, chili powder and pepper.
- In a medium skillet, heat oil over medium heat, pour in egg mixture and cook about 3 minutes, until partially set.
- Flip with spatula and continue cooking 2 to 3 minutes.
- Top with black beans, salsa and guacamole before serving.
Notes
- You can customize your toppings, such as using chopped cilantro, shredded cheese or hot sauce.
- Feel free to add the beans to the omelet as it’s cooking.
