Description

This southwestern omelet recipe is delicious. It’s full of protein, fiber and great flavor. Try this fun twist on your morning eggs today.


Ingredients

  • 1 tablespoon coconut oil
  • 3 eggs
  • ¼ onion, chopped
  • ½ bell pepper, chopped
  • 1 teaspoon chili powder
  • ¼ teaspoon black pepper
  • ½ cup black beans
  • ¼ cup guacamole
  • ¼ cup salsa

Instructions

  1. In a bowl, beat the eggs, then stir in onion, bell pepper, chili powder and pepper.
  2. In a medium skillet, heat oil over medium heat, pour in egg mixture and cook about 3 minutes, until partially set.
  3. Flip with spatula and continue cooking 2 to 3 minutes.
  4. Top with black beans, salsa and guacamole before serving.

Notes

  • You can customize your toppings, such as using chopped cilantro, shredded cheese or hot sauce.
  • Feel free to add the beans to the omelet as it’s cooking.
