Southwestern Omelet Recipe
This southwestern omelet recipe is delicious! It’s full of protein, fiber and great flavor! Try this fun twist on your morning eggs today!
- 1 Tablespoon coconut oil
- 3 eggs
- ¼ onion, chopped
- ½ bell pepper, chopped
- 1 teaspoon chili powder
- ¼ teaspoon black pepper
- ½ cup black beans
- ¼ cup guacamole
- ¼ cup salsa
- In a bowl, beat the eggs, then stir in onion, bell pepper, chili powder and pepper.
- In a medium skillet heat oil over medium heat, pour in egg mixture and cook about 3 minutes, until partially set.
- Flip with spatula and continue cooking 2 to 3 minutes.
- Top with black beans, salsa, and guacamole before serving.
I add them as filling in the omelet!
