Seems to me that Worchestshire is not gf, either way with the high sodium, caramel flavoring & other GMO infused ingredients, I definitely cannot use it & have often wondered what a good replacement for it is?

Just did this before seeing the post! Followed the boneless roast package directions which includes searing all sides of the meat 1st after seasoning it and inserting garlic slivers into random slits in meat. Also, only 1cup atmost of liquid is necessary since you always end up with more in crockpot cooking. Used miso broth for mine, was very flavorful! :-)

When you say water to cover the whole lamb, that seems like a lot of water, so literally put water in until the whole leg is submerged? Just wanted to make sure I read that right and didn’t add too much water!

I make leg of lamb in the oven. I insert fresh garlic in the meat, rub with olive oil. Then I add oregano and cook about 2 hours on 350 degrees, cooking time depends on size of lamb. I cook until tender. I have put potatoes cut in quarters, I put them in the last 40 minutes of cooking the lamb.
