Giblet Gravy Recipe, for Turkey or Chicken

  • boiled chicken (or turkey) giblets, minced½ cup
  • arrowroot starch1 tablespoon
  • chicken or turkey drippings or grass-fed butter¼ cup
  • chicken bone broth3 cups
  • shallot, finely chopped½
  • cloves of garlic, minced2
  • celery, chopped¼ cup
  • carrots, chopped¼ cup
  • cayenne¼ teaspoon
  • sage, chopped1 teaspoon
  • salt1 teaspoon

Method

  1. In a large saucepan, over medium heat, combine giblets, arrowroot, chicken drippings, shallot, garlic, celery, carrots, cayenne, sage and salt.
  2. Sauté until roux becomes slightly thick, about 2 minutes.
  3. Add in bone broth and allow to simmer on medium-low for about 8–10 minutes or until the gravy reaches the consistency you like.
