Ingredients:

  • 2 cups cashews (raw, soaked in filtered water for 4 hours)
  • 2 cups young coconut meat
  • ¾ cup water (as needed)
  • 1 cup honey
  • ⅓ cup coconut butter
  • 2 tablespoon vanilla extract
  • ½ teaspoon sea salt

Directions:

  1. In a high speed blender, blend all ingredients except the cashews until creamy and smooth.
  2. Add water as needed to keep the mixture circulating through the blender.
  3. Once mixed well, add the drained cashews and blend till smooth and whipped
  4. Transfer mixture to a bowl and chill in the fridge until desired consistency is achieved

    Problem is for a diabetic, honey is not an option. I was doing paleo for a while but my blood sugars were still high. When I went on the ketogenic diet, my sugars now are in the two digits.

      hi I am 29 and diagnosed a year ago with type two diabetes I have ran into some issues here lately with high sugars for no reason the only way to keep my sugars in decent range is with more excerise than I think some should have to do being my weight is perfect. But never do I see 2 digits it’s always 102 to 128 I’d love to hear more about the ketogenic diet if you don’t mind?

      Not a commercial just an opinion. Substitute Stevia for honey. My favourite is Truvia simply because it tastes better than any other Stevia I have tasted. They blend it with Erythritol I think that is why it tastes better. Yes Erythritol is as safe as Stevia for diabetics. Try it in your coffee first that will give you an idea how nice it tastes. Some claim an after taste so very personal choice.

    IF you don’t use the honey does it change the recipe. I just can’t tolerate that much sugar but want to find an ice cream recipe I can make that does not give me a sugar hangover

    Where can i get coconut butter please? this looks awesome, became vegetarian recently but can’t have egg or dairy either! Miss icecream and cheese! :(.

    I am 81 and have been using organic vanilla ice cream as a medication. Specifically the publix market Greenwise brand. They changed their formula a couple of years ago and its not as good as it used to be but still very enjoyable.
    I eat about half a cup before bedtime. 1. It cools my gums, 2. it then tastes great and 3. it seems to coat and calm my stomach and helps me sleep.
    I have related this to my Dr. but he just poopooed the idea and warned me of the sugar and fat. But the effects seem real and I was very happy to read of vanillas benefits. It is worth exploring.
    PS: I do not take any medications except for the prostate and my blood sugar is a little over 100.
