  • extra virgin olive oil½ cup
  • juice of 3 limes
  • green pepper, chopped1
  • green chili pepper, chopped1
  • shallots, chopped2
  • cloves garlic, chopped4–5
  • bunch parsley½
  • bunch cilantro½
  • sea salt½ teaspoon
  • thyme½ teaspoon
  • cumin½ teaspoon
  • extra virgin olive oil½ cup
  • juice of 3 limes
  • red pepper, chopped1
  • red chili pepper, chopped1
  • shallots, chopped2
  • Roma tomatoes, chopped2
  • red onion, chopped½
  • cloves garlic, chopped4–5
  • bunch parsley½
  • bunch cilantro½
  • sea salt½ teaspoon
  • thyme½ teaspoon
  • chili powder½ teaspoon
  • smoked paprika½ teaspoon

Method

  1. For each sauce, put everything in a food processor and blend until well-combined. Be careful not to mix the two.
  2. After finished with one of the sauces, make the other one.
  3. Refrigerate until ready to serve on top of a grilled meat or a vegetable dish. These sauces can also be used as a dipping sauce or even a marinade.
