Gluten Free Berry Muffins Recipe

Total Time: 14-16 minutes
Serves: 12

Ingredients:

  • 1½ cup almond flour
  • 1 cup coconut flakes
  • 1 large ripe banana
  • 3 eggs
  • 4 tbsp coconut oil (melted)
  • ½ cup goat milk kefir
  • 10 medjool dates
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • a pinch of sea salt
  • 2 handfuls of berries (frozen raspberries and blueberries)

Directions:

  1. Set the oven to 400°F.
  2. Mix dates in a blender for half a minute.
  3. Add all the other ingredients to the blender except the berries and mix for approx. 1 minute.
  4. Stir in the berries with a spoon.
  5. Pour in muffin tins and bake for 12-15 minutes.

    Is the second step to put the almond flour in the blender or the dates? Not sure I understand since it says put the almonds in the blender but it is calling for almond flour.

    If I don’t have Kefir on hand could I use raw milk? Also, shredded coconut be used instead of coconut flakes? Thanks! Looking forward to trying this recipe.

    How many calories per muffin? It is great ingredients but was concerned for calorie intake. I looked could not find the nutritional facts.

    Can I use coconut flour instead…or garbanzo bean flour. Almond flour is so expensive. Also is it plain Kefir or can I use blueberry?

      I prefer plain kefir so it doesn’t have any of the sugar but you can use blueberry. I would use a mix of coconut flour and another if you are going to use coconut flour because it pulls moisture from the mixture and will end up leaving your muffins very dry. If you click on the link, it brings you to the almond flour I personally buy. You can get a 5 pound bag for a great price!

        I can’t use almond flour due to allergies, what would you suggest to add with the coconut flour?

        You can pair the coconut flour with brown rice flour, garbanzo bean flour, buckwheat flour, cassava flour or tigernut flour. Just remember that the consistency may vary. I hope this helps!

    i cannot eat eggs or kefir. I can substitute flaxmeal/water for the eggs. What do you recommend substituting for kefir?

    Heads up! If you don’t keep them in fridge they get mouldy after 2 days. I guess that’s the beauty of no preservatives!
