Gluten-Free Baked Meatballs Recipe

Ingredients:

  • 1 pound beef and ½ pound of both: lamb and bison
  • ⅓ cup raw, smoked goat cheese
  • ¼ cup of the following: fresh parsley, fresh basil and oregano, all finely chopped
  • 1-2 tablespoons melted coconut oil
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 2 eggs
  • 1 tablespoon cassava flour

Directions:

  1. Preheat oven to 375 F.
  2. Line two baking sheets with parchment paper and set aside.
  3. Add all ingredients to a large bowl and, using your hands, mix until well combined.
  4. Roll into small meatballs and place on baking sheets.
  5. Bake for 12-15 minutes or until internal temperature reaches 165 F.
  6. Serve and enjoy!

    The recipie looks great, but I am highly allergic to milk, I even react to lactose-free milk. Any alternatives? I am also allergic to eggs, which I would just leave out in this recipie.

    someone said they were allergic to eggs. Can’t you substitute chia seeds and water? I think its 1 tsp chia seeds to 3 tsp water, not sure.

    What is the story on the comments about kefir? Kefir is not listed in the ingredients or the directions. I would prefer to use some other flour besides cassava because this is the first recipe that has it and I don’t want to buy a whole bag of flour and only use a small amount. Can you suggest an alternative flour?
