Ingredients:

  • 1 large Zucchini
  • 2 eggs
  • 3 tablespoons Italian seasoning or more to taste
  • 1 cup gluten-free flour
  • ½ cup Fresh Grated Romano (hard sheep cheese)

Directions:

  1. Preheat oven to 450 deg.
  2. Slice Zucchini into thin slices 1/4" -1/8"
  3. Mix Flour and Italian Seasoning in bowl
  4. Wisk together 2 eggs in separate bowl
  5. Coat Zucchini slices in egg then dredge through flour mixture
  6. Place on cookie sheet (coat in coconut oil for easier cleanup) and bake for 8-10 minutes
  7. Flip and then add fresh grated Romano
  8. Bake 8-10 more mins or until crispy

    Hi Dr. Axe,
    For the past few days, ever since “affiliate disclosure” has been appearing up around the Pin button, facebook button, and Google button, I have not been able to Pin any of your recipes or health tips. I have noticed that others are having the same issue. Is there something that can be done to fix this? When I go to “pin” whatever it is, no picture or description appears and therefore it will not allow me to pin anything of yours. I am getting very frustrated. I’ve commented as others have but I am getting no response. Please help me as I really enjoy your information.
