  • ½ cup coconut oil, melted
  • ¾ cup coconut sugar
  • 4 eggs
  • ½ teaspoon vanilla extract
  • ½ cup coconut flour
  • 2 cups coconut flakes
  • 1 dark chocolate bar, minimum 72 percent cacao


  1. Preheat oven to 375 degrees F.
  2. Mix eggs, coconut sugar, melted oil and vanilla together in a bowl.
  3. Add coconut flour and flakes and mix well.
  4. Roll dough into balls and place on a baking sheet.
  5. Bake for 15–20 minutes.
  6. Break the bar into small pieces and press in to the middle of each cookie.
  7. Sprinkle extra coconut flakes on top if desired.

    I cannot use coconut flakes, is there something else I can substitute for the 2 cups of flakes? Also, I believe I will try putting some chocolate chips in the middle of the cookie before baking. I have a weakness for good dark chocolate, if it’s in the house it wouldn’t be here long enough to make the cookies!! (just being honest!!)

    If 1 cookie is 422 calories, i would not bother to make them, no thanks…thats the calories for a meal..

    I agree that the calorie count seems excessive, but from looking at the ingredient list, I’m guessing this makes st least 2 dozen cookies. Recipe says there are 10-12 servings, do they must be talking about 2 or 3 cookies as a serving. That would mean closer to 120cslories per cookie, I’m thinking. I will try this recipe with erythritol in place of the coconut sugar and Lily’s stevia dark chocolate, so that will get my carb count down, if not the calories, too.
