Fall Chicken Salad Recipe
This fall chicken salad recipe is a classic. It’s healthy, easy to make and delicious!
Ingredients:
- One 6-ounce cooked chopped chicken breast
- 1 chopped celery stalk
- 6-8 sliced grapes
- ¼ cup chopped pecans
- Dressing:
- ¼ goat kefir or Paleo mayonnaise
- 1 teaspoon dijon mustard
- 1 teaspoon black pepper
- fresh spinach or lettuce
Directions:
- In a small bowl, add in chicken, celery, grapes and walnuts.
- In a separate bowl, whisk kefir, dijon mustard and pepper.
- Add dressing to chicken mixture and stir until well combined.
- Serve on bed of spinach.

That looks like a delicious and healthy lunch….the problem is getting some of the ingredients in this area….thanks.
Can I use Greek yogurt instead of Kefir?
We had this salad for dinner, it was very, we made a couple of changes, my daughter doesn’t like yogurt or mayo based dressings so we used Braggs Healthy Vinagrette for her and she liked it. I used Soy Free Vegenase with Dijon Mustard and Pepper and it was delicious. Because I can’t eat much vitamin K I placed all on a bed of lettuce instead of Spinach and it was good. We added Heirloom tomatoes, substituted pecans for walnuts and I forgot the celery but it was still great. I also added Chia Seeds and it was great. Just some ideas, the salad itself is lovely.
