Start by removing the rind from the watermelon and cutting the fruit into large pieces. Since the watermelon is the real star of this recipe, opt for the best melon you can find. Add the fruit to a large bowl.

Next, mix the balsamic vinegar, raw honey and freshly chopped mint in a small bowl. Whisk until all the ingredients are blended and smooth. Pour the dressing over the watermelon pieces and refrigerate for at least 30 minutes.

This time marinating is going to infuse the watermelon with a sweet, minty taste that you can only get from all-natural fruits and ingredients.
