When you think pizza, your mind probably goes to a cheesy, crispy dish. But what if you want a refreshing dish that’s easy to make and will leave you feeling healthy and revitalized? Then you have to try this Watermelon Pizza.

I’ve flipped the script on traditional pizza and created this fruity version. Instead of a pizza crust, you’ll start with a benefit-rich watermelon base. The fruit is naturally low-calorie and hydrating, helping to detox the body. You’ll enjoy the best of summer’s bounty as well, with a mix of kiwis, mangoes, cherries, pineapple and your favorite berries.

And did I mention this is easy to make? You’ll have this watermelon pizza ready in no time.

Start by cutting the watermelon into four slices, then topping each with yogurt. I’ve used coconut yogurt to keep this vegan-friendly, but you can also use Greek yogurt or plain organic yogurt. Not only will this add a “sauce” to the watermelon pizza, but you’ll get protein as well, helping to keep you full.

Next, add the fresh fruit and mint onto the slices. Chopping the fruit is what will take you longest. To minimize assembly time, you can prep the fruit the night before serving.

Ingredients:

  • 1 watermelon, sliced
  • coconut yogurt
  • 3 kiwi, chopped
  • 1 mango, chopped
  • 1 pineapple, chopped
  • 1 package strawberries, blueberries, raspberries all sliced
  • 10 cherries, pitted and sliced
  • top with raw honey and mint leaves

Directions:

  1. First, cut the slices of watermelon into four pieces.
  2. Top with yogurt, fresh fruit and mint.
  3. Drizzle with raw honey. Serve.
