These gluten free pancakes are easy to make, fast and a delicious way to start your day. I think it’s the best gluten free pancakes recipe!

  • 1 cup gluten-free pancake flour
  • 2 eggs
  • ¼ cup coconut milk
  • 1 scoop vanilla whey protein powder (optional)
  • ½ cup berries or applesauce
  • ½ tsp cinnamon
  • Stevia to taste
  • 2 tablesppon coconut oil
  • Maple syrup


  1. Mix all ingredients (except coconut oil, syrup)
  2. Heat coconut oil or butter in a skillet over medium heat. Scoop batter into pan and cook until bubbles form through the batter (about 3-4 minutes)
  3. Flip the pancake and cook another 3-4 minutes.
  4. Lightly drizzle with grade B maple syrup and serve

    These pancakes are amazing. Sometimes I make up a few, put extras in the fridge, and warm one up for dessert later in the week. Seriously, they are good anytime! Helps with that occasional desire for something sweet; love ’em!

    I notice that Bob’s Red Mill pancake mix listed here in this recipe contains corn starch and corn flour. Is that really a good idea and how do you know if it is GMO corn or not?

    one suggestion is to use Pamela’s brand pancake mix. It is corn free and wheat free. It’s made primarily from rice flour, almond meal, and potato starch

    I feel like the best gluten-free pancakes wouldn’t include processed corn or whey powder. Also, the post about these being the “best” on facebook sort of sparked my competitive streak. Please try my recipe and tell me if you still think these are the best! :)
