  • 1 cup coconut oil
  • 1/2 cup chia seeds
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • 1/4 cup unsweetened coconut flakes


  1. Using a hand mixer, mix all ingredients together in a bowl.
  2. Spoon into muffin cups/muffin tin and freeze for an hour.
  3. Sprinkle with extra coconut flakes if desired
