Do you have some leftover turkey? Then this curried turkey salad recipe is a delicious way to use those leftovers and offers a healthy lunch the following day.

It’s both easy to make and very versatile, as it can be eaten plain, on a sandwich or even on a salad.

How to Make Curry Turkey Salad

Start by chopping up the turkey meat, which can be a mix of light and dark. Place it in a big mixing bowl. Follow with the diced celery, chopped apple and green onions, raisins, pecans and sesame seeds.

Next add the pepper, curry, honey and Paleo mayonnaise. Paleo mayo can be made by scratch or bought in most grocery stores these days.

Give it big mix with a wooden spoon, then store in the refrigerator until it’s ready to serve. It’s often best to let it sit for a few hours to allow the flavors to meld.

Ingredients

4 cups chopped cooked turkey meat (light and dark)
½ cup diced celery
1 apple, cored and chopped
4 green onions, chopped
½ cup raisins
½ cup chopped pecans
1 tablespoon sesame seeds
⅛ teaspoon black pepper
1 tablespoon curry
1 teaspoon raw honey
¾ cup Paleo mayonnaise


Instructions

  1. In a large bowl, combine all ingredients and mix well.
  2. Refrigerate until ready to serve. It’s often best to let it sit for a few hours to allow the flavors to meld.

    I have learned so much from you!!!!!!!!! I am making the curried turkey salad as I type…… I can not wait to eat it!!!!! I do have a question, I am allergic to ALL nuts….. except coconut. Any suggestions on replacements?
