Could the sugar be left out of this recipe and stevia used in it’s place?
Yes, it could … but a mixture of stevia and monk fruit would probably work best for taste approximation.

I cannot use coconut flakes, is there something else I can substitute for the 2 cups of flakes? Also, I believe I will try putting some chocolate chips in the middle of the cookie before baking. I have a weakness for good dark chocolate, if it’s in the house it wouldn’t be here long enough to make the cookies!! (just being honest!!)
Could you use Yacon instead of sugar?
