This Raw Superfood Carrot Salad is packed with nutritious ingredients. Loaded with carrots, which are terrific for your eyes and heart, crunchy pecans and anti-inflammatory goji berries, this superfood salad is just what you need to hit the “reset” button. It’s also crazy easy to make!
Mix up all your ingredients. Use a vegetable peeler to shred the carrots quickly. I recommend green apples for their tart taste and change of color, but choose your family’s favorite variety — or whatever’s on sale!
Opt for the freshest fruits and veggies here here. Since the salad is raw, you can’t fall back on cooking to disguise any questionable ingredients.
Serve the salad chilled and you’re done! It’s seriously that simple. You can make this salad ahead of time and keep in the fridge until you’re ready to eat, but it should take you about 15 minutes to prep all the food. Enjoy!

- 10 large shredded carrots
- 1 cup dried goji berries
- 4 green apples, chopped
- 1 cup pecans
- 3 tablespoons Dijon mustard
- ¼ cup fresh squeezed lime juice
- ¼ cup maple syrup
- 1 teaspoon lemon pepper
- 1 teaspoon sea salt
Directions:
- Mix all ingredients together.
- Serve chilled.
