Ingredients:

  • 1 medium red onion, thinly sliced
  • 1 tablespoon avocado oil
  • 12 ounces spring lettuce mix
  • ¼ cup walnuts, roughly chopped
  • ½ cup yellow grape tomatoes, halved
  • 1 cup mixed seasonal berries (strawberries, blackberries, raspberries, blueberries)
  • 4 ounces goat cheese, crumbled
  • ½ cup raspberry vinaigrette
  • Pinch of sea salt and black pepper

Directions:

  1. Preheat oven 350 degrees.
  2. In a medium bowl, toss onions, walnuts, avocado oil, sea salt and black pepper.
  3. Place on a baking sheet and roast approximately 15-20 minutes. Set aside to cool.
  4. In a large bowl, toss spring mix, tomatoes, berries, goat cheese, roasted onions, walnuts, and vinaigrette.

    DEAR DR.AXE,
    I appreciate so much these Gluten Free Recipes. My Dear Aunt Gertrude ( my fathers dister) died in 1987 from having the Celiac Disease which at that time knew nothing about this inherited disease.
    I suffered as a child, of course no one knew why. My oldest son also has inherited it.
    I am very, very sensitive to Gluten and try very hard to be safe from ingesting it.
    I get very bored, tired of eating the same old, same old , so enjoy new GF recipes, foods.
